Vegan Chilli

Sunflower mince 100g
Bell Peppers x 3
Carrots x 3
Courgettes x 1
Bellygoodness chilli sauce

 

1. Soak sunflower mince in water to soften for 10-15 mins

2. Cut peppers, courgettes and carrots into chunks and fry in olive oil for 15-20 mins

3. Add the sunflower mince and stir

4. Pour in the chilli sauce and stir together

5. Simmer for 5-10 mins

6. Serve with your choice of rice, quinoa or jacket potato
