Vegetable Curry with Quinoa

Why not add a modern twist to a veggie curry with quinoa? Add some nuttiness to our velvety curry sauce and your favourite choice of veg for a meal that’s both nutritious AND tasty.


  • Bellygoodness curry sauce
  • 50g courgette, sliced
  • 50g aubergine in 2cm chunks
  • 200g butternut squash, cubed
  • 1 tbsp olive oil
  • 1 ½ cup quinoa
  • 5g coriander, finely chopped


  1. Add the quinoa to the saucepan and cook according to itsinstructions
  2. Heat the oil in a large saucepan and add vegetables, stirring to coat in the oil and cook for approximately 8-10 minutes until they start to soften
  3. Remove any excess juice from the vegetables. Add your Bellygoodness curry sauce and stir in, heating for a further 3-4 minutes
  4. Serve with chopped coriander and quinoa
