Nomato Vegan Lasagne

Who says a plant-based recipe can’t pack a hearty punch? This tomato-free vegan lasagne is filled with yummy nutritious vegetables to give it a chunky and satisfying texture. Best of all, it’s brought together by our famous Nomato and white sauces, both of which are gluten free, dairy free, and suitable for people with all kinds of allergies and intolerances.

Ingredients​

  • Sunflower mince 100g
  • Bellygoodness Nomato Sauce
  • Bellygoodness white Sauce
  • Salt & pepper to taste
  • Bell Peppers x 3
  • Carrots x 3
  • Courgettes x 1
  • Vegan lasagne pasta sheets
  • Vegan cheese of your choice

Instructions

  1. Soak the sunflower mince in warm water
  2. Cut the peppers and carrots into small cubes and fry in olive oil
  3. Add the sunflower mince and Nomato sauce and stir together
  4. Simmer for 5-10 minutes
  5. Add 1/3 of the mince and veg into a deep lasagne dish and pat down
  6. Cover with 1 layer of lasagne pasta sheets and spoon/spread on the white sauce
  7. Repeat until all the mince has been used up – should make approximately 3 layers!
  8. Top with cheese
  9. Bake on a medium heat for 20-45 minutes until the cheese has browned
